Admittedly I’ve probably owned every single kitchen appliance that exists. In the past six months I’ve worked pretty hard to streamline my kitchen for the sake of convenience, and counter space (these NYC kitchens aren’t exactly big) If you could only have one kitchen appliance, I’m voting “blender” every single time. You can make soups, sauces, butters, meal prep, etc with relatively little clean up.

This soup is PERFECT for a season shift, and has some surprising ingredients that make it seasonally relevant, versatile, and SCRUMPTIOUS.

Coconut Lentil Apple Soup

Ingredients
  • 1/2 cup apple, chopped
  • 3/4 cup green onion(white & green)
  • 1/2 cup carrot, chopped
  • 3 garlic cloves, chopped
  • 3 tbsp ginger, finely minced
  • 1/2 tsp cumin
  • 1 tsp turmeric
  • 1/2 tsp curry powder
  • 1/2 tsp paprika
  • 1 1/2 cup lentils
  • 1 1/2 cup coconut milk
  • 2 tbsp lime juice
  • 4 cups water
  • 2 tbsp neutral oil
  • Cilantro/mint, garnish
Instructions
  1. Heat oil over medium high heat.
  2. Add apple, green onion, carrot, garlic, ginger, cumin, turmeric, curry powder, and paprika. Cook for 10 minutes until ingredients soften.
  3. Add lentils, lower heat, and add 4 cups water. Let cook for 10 minutes covered.
  4. Add coconut milk, and cook for another 5 minutes.
  5. Take soup off heat, and spoon 3 cups soup into blender. Blend until smooth.
  6. Add blended soup back into soup pot, and cook for another 10 minutes.
  7. Stir lime juice in at the end. Spoon into bowls, garnish with cilantro or mint—Et Voila!
