Let’s face it: Eating healthy can be boring. People often stick to what they know and keep it simple. If I’ve learned anything from doing Whole30 and other similar diets, it’s that getting creative in the kitchen keeps things fun and exciting. I also believe it keeps you on track with your goals. Some of these diets aren’t always easy because of all the rules. So how do you make something not so easy enjoyable? You make it fun, and then it becomes easy! If living a healthier lifestyle is part of your 2019 goals, then you’ll definitely want to check out these recipes below.

Crispy Flax Chicken Fingers

When you think of flaxseeds, chicken fingers probably don’t come to mind… But they should! These flax chicken fingers are baked and made with wholesome ingredients.

Ingredients

Instructions

  1. Preheat the oven to 400 F.
  2. Spray a cookie sheet for chicken tenders; set aside.
  3. In a bowl, mix together the Brandless Flaxseed and mixture of seasonings; set aside.
  4. In a bowl, whisk together egg and almond milk.
  5. Take the raw chicken tenders, one-by-one, and dip into the egg mixture.
  6. After they are well coated, dip them into the flaxseed mixture until the chicken tender is covered completely.
  7. On the greased pan, lay the chicken tenders, place in the oven and bake for 15 minutes. Tip: If you like your chicken extra crispy, place it on broil for a few extra minutes. Feel free to add in different spices! Enjoy!
Almond Butter Cinnamon Doodles

For those times when you’re craving something sweet and the craving won’t go away, try out these 4-ingredient Almond Butter Cinnamon Doodles. Kind of like a snickerdoodle, but a little better for your body! 

Ingredients

Note: You can easily replace the almond butter with other nut butters, like peanut butter or walnut butter. The spices can also be adjusted and you can add in more flavors like nutmeg, ginger, allspice, and more!

Instructions

  1. Preheat the oven to 350 F.
  2. Place parchment paper on a cookie sheet.
  3. In a bowl, mix together all 4 ingredients until a cookie dough forms.
  4. Roll dough into cookie shapes, mini or regular size, and press down with a fork.
  5. Bake for 10-12 minutes or until nice, brown and toasty. Enjoy warm.
Walnut Banana Paleo Muffins

How would you like to have a Walnut Banana Bread Muffin for breakfast and not have to think twice about if they are healthy?

  1. Preheat oven to 350 F.
  2. In a bowl, mash the banana and egg together. Add vanilla extract and mix.
  3. Then add all other ingredients, except walnuts, and mix until well blended.
  4. Add in the chopped walnuts.
  5. Pour into a muffin pan and bake for 30 to 35 minutes.
Homemade Granola Bars

When trying to eat healthy, finding clean ingredient granola bars can be a little more difficult. When you make your own granola bar, you know the exact ingredients that you are putting into it, and you can pretty much create a flavor you are looking for.

Note: You can easily replace the almond butter with any other nut butter you would prefer. You can also add in extra ingredients, like dried fruit or nuts, to make it your own! Get creative and have fun!

Instructions

  1. Preheat oven to 350 F.
  2. In a mixing bowl, pour all ingredients in and stir together until it is thoroughly blended.
  3. In a greased 9×9 pan, pour mix in and press down until it is even all around.
  4. Bake for 30 to 35 minutes, or until golden brown on the top.
