Hot summer days inspire cravings for certain kinds of foods — and salad is the dish that may be most associated with the warmer season. Add that to the fact that you’re probably attending or hosting lots of fun outdoor gatherings where you might have to make a salad.

With that in mind, we want to help make those salads as easy as the days themselves — that means only a handful of ingredients, plus one of our organic dressings or olive oil to top it all off. We reached out to our community – thanks, guys!- for salad inspiration and love these three vibrant salad combos.

Quinoa Caprese Mason Jar Salad

Brighten up your desk lunch or pack a picnic with this colorful quinoa caprese mason jar salad, courtesy of Really Into This. Layer veggies like cucumber, bell peppers, and tomatoes with mozzarella cheese on the bottom of the jar, then add cooked Organic Quinoa and greens on top. Pour some organic salad dressing into the jar and you’re ready to go!

Simple Pasta Salad

Because a salad made of pasta is the best kind of salad. We’re loving this simple pasta salad recipe, courtesy of Melissa of A Happy Healthy Heart. All it needs is a few spices, a squeezed lemon, and a drizzle of olive oil. It keeps in the fridge for later use, so you have pasta salad on hand for lazy lunches, backyard barbecues, and impromptu picnics.

  1. Cook pasta according to package instructions. Meanwhile, make the dressing by combining olive oil, lemon juice and spices.
  2. Once pasta is cooked, mix pasta and vegetables together in a large bowl. Drizzle with the dressing and toss. Serve at room temperature or store in refrigerator to save for later.
Roasted Chickpea Salad

For an impressive yet easy salad, take inspiration from @bethgrahamwellness. Mix greens with summer fruits like fresh tomatoes and figs and top with spicy roasted chickpeas for a textural treat (check out our awesome recipe for roasted chickpeas beans here). For maximum enjoyment, take this salad outdoors! Beth likes hers on the porch, listening to the evening sounds of summer.
