Ingredients: For the filling: 2 1⁄2 pounds fresh berries (raspberries, strawberries, blueberries) 3 tablespoons Brandless maple syrup (or Brandless coconut sugar) 1 teaspoon vanilla extract juice of 1 lemon 2 tablespoons Brandless gluten free all-purpose flour
For the crumble: 1⁄2 cup Brandless quick cook rolled oats 1 cup Brandless almond flour* 1⁄2 cup pecans, roughly chopped (or other nut or seed of choice) 3 tablespoons Brandless ground flax seeds 1 tablespoon Brandless gluten free all-purpose flour 2 tablespoon Brandless maple syrup (or Brandless coconut sugar) 2 teaspoons Brandless ground cinnamon 1⁄4 cup Brandless coconut oil, melted (plus more for coating cast iron skillet)
For serving, optional: Coconut vanilla ice cream
- Preheat gas grill to medium (maintaining an internal temperature of 350-400 degrees F)*. Coat a 10-inch cast
iron skillet* with melted coconut oil. Add berries directly to skillet. Top with maple syrup, vanilla, lemon juice, and Brandless gluten free all-purpose flour and toss to combine. 2. In a large bowl, add the oats, almond flour, chopped pecans, flax seeds, coconut flakes, gluten free flour, coconut
sugar, and cinnamon; toss to combine. Add melted coconut oil and mix again, until mixture is crumbly. 3. Spread the crumble topping evenly over the berries. Place on the grill and close the lid. Cook crumble for 22-25
minutes, until the fruit is bubbling and the crumble is golden. 4. Allow crumble to cool slightly. Serve as is or with your favorite coconut vanilla ice cream.
*Notes: If using an oven, preheat to 350 degrees F. Bake crumble for 35-40 minutes, until the fruit is bubbling and the crumble is golden. ** Acidic foods tend to leach out a metallic taste when using cast-iron skillets. The longer and more seasoned your skillet is, the less likely your skillet will leach. Consider using an enamelware pan, too. **Brandless almond meal- Add 1 package of Brandless raw almonds to the bowl of a food processor or high speed blender. Pulse until finely ground and almonds have reached a flour-like consistency, 1 to 2 minutes.
